Prekmurje Vegan Bograč is a vegetable stew seasoned with paprika and other spices. It is a variation of goulash, which originated in Prekmurje and Hungary, and is a common dish eaten in Central Europe as well as other parts of Europe.
The word “bograč” comes from Hungarian and means “cauldron”. A cauldron is a metal pot for cooking over an open fire. Its characteristic shape and diagonal handle distinguish it from similar vessels.
Its origin dates back to the 9th century to stews eaten by Hungarian shepherds. Earlier versions of goulash did not include paprika, as it was not introduced to the Old World until the 16th century.
